3 cups peaches , peeled , pitted and sliced
1 cup blueberries or 1 cup cranberries
1/4 cup sugar ( I use splenda )
2 tablespoons honey
2 tablespoons cold unsalted butter , cut into thin slices

Instructions

1.In a food processor, pulse together the all-purpose flour, cornmeal, sugar (or splenda), salt, and butter until the mixture resembles coarse sand.
2.Stream in the buttermilk and ice water, pulsing briefly until the dough comes together.
3.Divide the dough into 6 portions and shape them into balls.
4.In a mixing bowl, toss together the peaches, berries, sugar (or splenda), and honey until well combined.
5.Preheat the oven to 375°F and line a baking sheet with parchment paper.
6.Place each dough ball on the prepared sheet and roll it out to a 6-8 inch circle.
7.Arrange the fruit mixture on top of the dough, leaving about 1 inch of space around the edges.
8.Fold the edges of the dough over the fruit mixture, pleating it together as needed to create a rustic look.
9.Dot the tops of the galettes with thin slices of cold butter and bake them for 35-40 minutes, or until the crusts are golden brown and the fruit is bubbly and caramelized.
10.Serve the galettes warm or at room temperature, garnished with whipped cream or a dusting of powdered sugar if desired.
