Ingredients

4 -6 medium potatoes ( or one potato per person )
2 small brown onions , peeled and thickly sliced
1 large roasting chicken ( mine was 1.7kg , around 3 1/2 lbs )
50 g butter , cut into small cubes
1 bulb of garlic , broken into cloves , peeled and roughly chopped
1 bulb of garlic , broken into cloves , unpeeled and roughly chopped
1 bulb of garlic , broken into cloves , unpeeled and unchopped
1 bunch fresh thyme
1 bunch fresh oregano
1 large lemons or 2 small lemons
olive oil
sea salt
black pepper , freshly ground
3 tablespoons water
1 cup chicken stock
1/2 lemon , juice of
Rustic Greek-Style Roast Chicken With Smashed Potatoes is a classic, hearty, Mediterranean dish that's perfect for a cozy night in at home. Instructions

1.Preheat the oven to 200°C (around 390°F).
2.Cut the chicken backbone out with sharp scissors or a sharp knife.
3.Spread the chicken as flat as possible and 'score' the skin deeply with a sharp knife. This allows the flavors to penetrate.
4.Cut the potatoes into smaller chunks (around quarters or halves depending on the size).
5.Mix the potatoes and onions in a bowl with the unpeeled garlic, oregano, lemon slices, thyme sprigs, salt, pepper, and good glug of your best quality olive oil and mix it all together.
6.Spread the potatoes and onions over the base of a large roasting tin.
7.Sit the chicken, skin-side up, on top of the potatoes and onions, those will add layers of flavor to the chicken.
8.Place all the cut up pieces of butter, garlic, and dot all over the chicken.
9.Add some more thyme and oregano between the potatoes and chicken.
10.Pour water and chicken stock over the chicken into the roasting tin.
11.Put the roasting pan into the oven for 50 minutes to 1 hour. You can check the chicken is cooked all the way through by cutting near the thigh and checking the juices are running clear.
12.Remove the chicken from the pan, set aside to rest, and keep warm.
13.Stir the potato and onion mix in the roasting tin to get all the juices mixed and then push them into a chunky mush.
14.Drop in the juice from lemon, then serve alongside the chicken.
