Ingredients

500 g beef , cut into chunks ( I used skirt but any stewing beef will do )
1 large onion , roughly chopped
5 garlic cloves , roughly chopped , slightly crushed
1/2 large courgette , large chunks
1/2 large bell pepper , large chunks
1/2 - 1 glass red wine
500 g new potatoes , cut in two
mixed herbs
bay leaf
salt & fresh ground pepper ( to taste )
dried chili ( to taste )
1 vegetable stock , cube
1 can chopped tomatoes
Rustic Beef Casserole (Spicy) is a perfect dish for a cold day to warm you up. This hearty meal is packed with beef chunks, onion, garlic, courgette, bell pepper, potatoes and tomatoes along with mixed herbs, bay leaf, vegetable stock, dried chili, salt, and fresh ground pepper. The dish is perfect for a family dinner or a get-together with friends. The recipe is quite easy to follow and can be adjusted according to your liking. You can make it spicier or milder depending on your preference. This dish also has the added benefit of being a one-pot meal, making it perfect for convenience and easy cleanup.

Instructions

1.Preheat the oven to 180C/350F/gas mark 4.
2.In a large casserole dish, heat some oil and fry the beef until browned on all sides, then remove and set aside.
3.In the same dish, add the onion and garlic and cook until softened.
4.Add the courgette and bell pepper to the dish and cook until slightly browned.
5.Pour in the wine and let it sizzle for a few minutes.
6.Add the potatoes, herbs, bay leaf, salt, pepper, dried chili, vegetable stock and chopped tomatoes to the dish and stir.
7.Place the beef back into the dish, cover and cook in the oven for 2 hours or until the beef is tender.

This hearty dish is perfect for a cold day or when you need a comforting meal.

The spice level can be adjusted to your liking.

The long cooking time may not be practical for a weeknight meal.

This dish is not suitable for those following a vegetarian or vegan diet.
