3 medium beets
1/3 cup lemon juice

1/2 tablespoon Mrs . Dash seasoning mix
1/2 teaspoon hot sauce ( optional ) or 1/2 teaspoon Tabasco sauce ( optional )
1/2 tablespoon ground cumin ( optional )
2 tablespoons oil
20 cups water

Instructions

1.In a large pot, add 20 cups of water and peeled beets, bring to a boil, reduce heat, and let it simmer for 10 minutes.
2.Add diced onions, sliced carrot, and diced potatoes to the pot, then bring back to a boil, reduce heat and let it simmer for 15 minutes.
3.Add shredded cabbage, kidney beans, lemon juice, whole black peppercorn, bay leaves, oil, Mrs. Dash seasoning mix, salt, and sugar. Cook for an additional 15-20 minutes or until vegetables are soft.
4.Remove the bay leaves and serve hot with bread or crackers.
