Instructions

1.Preheat oven to 350°F (175°C).
2.Spread nuts in a single layer on a baking sheet. Toast until golden, about 10 minutes.
3.Chop nuts very finely.
4.Using an electric mixer, cream butter and powdered sugar in a large bowl until light and fluffy. Mix in vanilla. Gradually add flour and salt and beat just until blended. Stir in nuts. Roll dough into 1-inch balls for small cookies or 1 1/2-inch balls for large cookies.
5.Place on a baking sheet.
6.Bake cookies until golden brown on bottom and just pale golden on top, about 18 to 20 minutes. Cool cookies 5 minutes on baking sheet.
7.Roll cookies in powdered sugar. Cool cookies completely on rack. Roll cookies in powdered sugar again.
