Ingredients

1/2 cup dill
1/2 cup seltzer water
2 tablespoons white vinegar
1 1/2 tablespoons ground coriander
1 1/2 tablespoons paprika
1 teaspoon cumin
1 1/2 lbs boneless lamb shoulder , cut into cubes
3 small yellow onions , two cut into 2 inch wedges , one minced
5 garlic cloves , minced
3 tablespoons tomato paste
1 teaspoon red chili pepper flakes
16 pitted prunes , roughly chopped
1 can tomatoes with juice , crushed
1 cup minced coriander
1/2 cup minced parsley
1 tablespoon lemon juice

Russian shashlyk, also known as lamb kebab, is a popular dish in Eastern European and Middle Eastern cuisine. The marinade infuses the lamb cubes with a blend of flavorful spices, making it incredibly tender and juicy when grilled. Instructions

1.In a mixing bowl, combine dill, seltzer water, white vinegar, ground coriander, paprika, and cumin.
2.Add lamb cubes and coat with the marinade. Cover and marinate in the fridge for at least 4 hours.
3.In a saucepan, saute 2 wedged onions and garlic until translucent.
4.Add tomato paste, red chili flakes, and prunes. Simmer for 5 minutes.
5.Add crushed tomatoes, minced coriander, and parsley. Simmer for another 10 minutes. Stir in lemon juice.
6.Preheat grill on medium-high heat.
7.Thread lamb cubes onto metal skewers, alternating with onion wedges.
8.Grill the kebabs for 6-8 minutes on each side, or until charred and cooked through.
9.Serve hot with tomato prune sauce on the side.
