Ingredients

1 1/2 lbs potatoes , scrubbed and cut into 1 inch chunks
1 tablespoon olive oil
1 lb fresh white mushroom , halved ( or quartered if large )
6 garlic cloves , skins on
4 large shallots , quartered
1 sprig fresh rosemary
1 sprig fresh thyme
salt , to taste
pepper , to taste
This Russian-inspired side dish is a hearty and flavorful combination of roasted potatoes, mushrooms, garlic, and shallots, topped off with fragrant rosemary and thyme. Instructions

1.Preheat your oven to 425°F (218°C).
2.In a large, oven-proof skillet, heat the olive oil over medium-high heat.
3.Add the potatoes to the skillet and brown them on all sides.
4.Add the mushrooms, garlic, shallots, rosemary and thyme to the skillet and season everything with salt and pepper to taste.
5.Transfer the skillet to the oven and roast for 30-35 minutes, or until the potatoes are tender and golden brown.
6.Remove the skillet from the oven, let it cool for a few minutes, then serve your Russian roasted potatoes with mushrooms hot!
