Ingredients

6 potatoes , parboiled , peeled , and chopped
6 eggs , hardboiled , peeled and chopped
6 pickles , chopped
1/2 - 3/4 lb of cooked meat , chopped ( e.g. , coldcuts , leftover roast beef or chicken )
1 can peas , well drained
6 -8 scallions , chopped
salt , pepper to taste
mayonnaise
3 large carrots , parboiled , peeled , and chopped
1/2 - 1 cup sauerkraut , drained and chopped
1 cup cooked beans , well drained
Russian Potato Salad, also known as Salat Olivier, is a classic dish that has been enjoyed for many years. Originally created in the 1860s by a French chef working in Moscow, this salad has evolved over the years and become a staple in Russian cuisine. The ingredients used in this salad are simple yet flavorful making it perfect for any occasion. It is also a great dish to make for meal prep as it can last in the refrigerator for a few days.

Instructions

1.Boil the potatoes until they are just tender. Do not overcook them.
2.Drain and let the potatoes cool.
3.In a large mixing bowl, add the chopped pickles, sauerkraut, chopped scallions, chopped hard-boiled eggs, cooked meat, peas, and chopped cooked carrots. Toss it all together.
4.Add the salt, pepper, and mayonnaise and gently mix all of the ingredients together.
5.Taste and adjust the seasoning as necessary.
6.Cover and refrigerate for at least 1 hour or overnight.
7.Serve chilled and enjoy!
