Ingredients

4 medium idaho potatoes
5 hard-boiled eggs
1 medium pickle
1/2 English cucumber
16 ounces canned peas , drained
1 green apple
1 package bologna ( I prefer chicken bologna )
1/2 cup mayonnaise ( more or less depending on your taste )
1/4 teaspoon salt ( optional )
1/4 teaspoon pepper ( optional )
Russian Potato Salad Olivier, also known as Russian Salad, is a classic dish that originated in the late 19th century in Moscow. It was created by a French-born chef named Lucien Olivier, hence the name. The salad soon became very popular and was served in many restaurants and cafes in Tsarist Russia. Today, it is considered a traditional Russian recipe and has many variations across Eastern Europe and Central Asia. This version of Russian Potato Salad is a South Russian variant that features bologna and apple, giving it a unique and delicious flavor.

Instructions

1.Peel and chop the potatoes into small cubes. Boil until tender and drain.
2.Peel and chop the hard-boiled eggs, pickle, and cucumber. Core and chop the apple. Cut the bologna into small cubes.
3.In a large bowl, mix the potatoes, eggs, pickle, cucumber, peas, apple, and bologna with mayonnaise. Add salt and pepper to taste.
4.Refrigerate for at least 1 hour before serving. Serve cold.
