Ingredients

6 medium tomatoes , quartered
1 stalk celery , chopped
2 carrots , cut into finger size pieces
garlic , 3-5 cloves
1 bunch fresh dill
1 tablespoon caraway seed
1 tablespoon sea salt
Pickled tomatoes are a perfect addition to any charcuterie or cheese board, and can also be enjoyed as a snack or used in salads, sandwiches and wraps. They have a tangy and savory flavor that compliments a range of savory dishes.

Instructions

1.In a large jar (1L) or container, mix the tomatoes, celery, carrots, garlic, dill, caraway seed and sea salt.
2.Fill the jar with water until the ingredients are fully submerged..
3.Cover the jar with a lid and let it sit in a room temperature for 2-3 days until it’s pickled to your liking.
4.Once pickled, refrigerate and use within few weeks.

PROS

The pickling process can help preserve the tomatoes to be enjoyed in months following the harvest period.
They are a good source of vitamins C and K, and are low in calories.

CONS

The tomatoes will soften during the pickling process.
