Ingredients

5 medium beets
1/2 cup carrot , chopped
5 teaspoons tomato paste
16 cups chicken stock
2 large potatoes
1 medium head of cabbage
1 cup green bell pepper , chopped
3 tablespoons sugar
1/3 cup lemon juice , fresh squeezed
1 teaspoon salt
1/2 teaspoon ground black pepper
1 garlic clove , minced
1 teaspoon fresh dill , chopped
Borscht is a family of soups that originated in Eastern Europe and is a staple in Russian cuisine. Instructions

1.Heat oil in a soup pot over medium heat and sauté onions for 5 minutes.
2.Peel and grate the beets and add them along with chopped carrots, tomato paste, and chicken stock.
3.Bring to the boil, reduce heat to low, and simmer for an hour.
4.Peel and cube potatoes, shred cabbage, and add along with green bell pepper, sugar, lemon juice, salt, and black pepper, simmer for another 30 minutes or until tender.
5.Add minced garlic and chopped dill and cook for 5 more minutes then serve hot.
