Ingredients

1 3/4 cups sugar
1/2 cup scalded milk , cooled to 110 degrees
4 cups flour
8 tablespoons unsalted butter
8 large egg yolks
2 large egg whites
1 teaspoon vanilla
2 teaspoons cardamom
1/2 teaspoon salt
1/3 cup golden raisin
1/4 cup slivered almonds
1/4 cup chopped candied orange peel
2 teaspoons lemon juice
1/8 teaspoon almond extract
Russian Kulich Bread is a traditional sweet and aromatic Easter bread that originated in Russia. This cylindrical-shaped bread is typically prepared during the Holy Week before Easter and is served with Paskha (a traditional Russian sweet cheese spread) and hard-boiled eggs. The bread is soft and fluffy with a slightly sweet flavor and a hint of cardamom spice. It is often baked in tall cylindrical molds to achieve the traditional shape and is typically decorated with colorful sprinkles or frosting for added visual appeal.

Instructions

1.In a large mixing bowl, mix 1/4 cup of sugar, scalded milk, and 1/2 cup of flour to make a “sponge”. Cover and set it aside for about 1 hour.
2.Cream together 8 tablespoons of butter and 1 1/2 cups of sugar until fluffy.
3.Beat in 8 egg yolks and 2 egg whites until light and frothy. Stir in 1 teaspoon of vanilla extract, 2 teaspoons of cardamom, and 1/2 teaspoon of salt.
4.Add the sponge to the egg mixture and stir well. Gradually mix in enough flour (about 3 1/2 cups) to make a soft dough.
5.Knead until the dough is smooth and elastic. Stir in the golden raisins, slivered almonds, chopped candied orange peel, lemon juice, and almond extract.
6.Grease and flour a tall cylindrical mold. Fill the mold halfway with dough. Cover and let it rise until the dough reaches the top of the mold.
7.Brush with an egg wash made from 2 egg yolks and 2 tablespoons of water.
8.Bake at 350 degrees Fahrenheit for about 1 hour and 15 minutes.
