Ingredients

3 1/2 cups sugar
125 g butter
3 tablespoons golden syrup
1/2 cup milk
1/2 teaspoon salt
200 g sweetened condensed milk ( half a normal tin )
2 teaspoons vanilla essence
Russian Fudge, also known as Russian Caramel or Penuche, is a heavenly sweet indulgence that originated in New Zealand. It is a traditional treat that is loved for its rich and creamy flavor. Russian Fudge is prepared by boiling sugar, butter, milk, and golden syrup together until it forms a soft ball that can be beaten until it is nice and grainy. Instructions

1.In a heavy-based saucepan add sugar, butter, golden syrup, milk, and salt.
2.Place over medium heat and stir until the sugar dissolves.
3.Bring to a boil, stirring occasionally, until the mixture reaches the soft ball stage.
4.Remove from heat and stir in sweetened condensed milk and vanilla essence until well combined.
5.Beat the mixture until thick and grainy.
6.Pour into a greased 20 cm square cake pan.
7.Leave for 10 minutes and then mark into squares.
8.When it is cold, cut the fudge into the marked squares and serve.
