Ingredients

2 cups red currants ( or a mix ) or 2 cups black currants ( or a mix )
1 1/3 cups raspberries
1/4 cup superfine sugar
1 1/2 tablespoons arrowroot
1 -2 tablespoon blackberry liqueur
plain yogurt , to serve
Russian Fruit Compote is a classic drink that is traditionally served during summer months with fresh berries. It is a refreshing and delicious way to cool off on a hot day. This recipe uses a mix of red currants, raspberries, and a touch of blackberry liqueur for added flavor. The addition of arrowroot gives the compote a silky texture and thickens the liquid slightly. Instructions

1.Rinse and stem the currants and raspberries.
2.In a large pot, bring 6 cups of water to a boil.
3.Add the currants, raspberries, and superfine sugar and stir well.
4.Simmer on low heat for 5-10 minutes until the fruit is soft.
5.Once soft, remove the pot from heat and strain the juice through a fine-mesh sieve, reserving the solids.
6.In a small bowl, whisk together the arrowroot and 1/4 cup of the strained juice until smooth.
7.Pour the arrowroot mixture back into the pot with the rest of the fruit juice and stir well.
8.Return the pot to low heat and stir until the mixture thickens.
9.Add the blackberry liqueur to the pot and stir.
10.Transfer the fruit solids to a large bowl and pour the hot liquid on top.
11.Stir well and refrigerate for at least 2 hours or overnight.
12.Serve chilled with a dollop of plain yogurt on top.
