Ingredients

2 cups fresh cranberries , hulled and washed ( or strawberries or raspberries )
5 cups water
6 tablespoons sugar ( for cranberries , 3 to 4 for strawberries or raspberries )
1/4 cup potato starch

Instructions

1.In a large saucepan, combine the berries and water and boil until the berries burst
2.Add the sugar and stir
3.Decrease heat to medium. Add the potato starch to a small bow and mix in 3-4 tablespoons of water until smooth.
4.Slowly pour the potato starch mixture into the boiling berry mixture while stirring constantly
5.Continue to cook for another 3-4 minutes or until the mixture thickens
6.Strain the mixture through a fine-mesh sieve
7.Pour the mixture into a bowl and let it cool completely
8.Refrigerate for at least an hour before serving
