Ingredients

2 1/2 cups dried wild mushrooms ( Morels , Porcini , Brazilian Caps , Ivory Portabellas , Shiitake , Oyster , Trumpets )
6 cups water
8 cups reduced-sodium chicken broth
2/3 cup barley
2 large potatoes
2 large carrots
2 large yellow onions
1/2 teaspoon salt
1/2 teaspoon black pepper
1 bunch fresh parsley

Russian Barley Mushroom Soup is a classic comfort food that is perfect for chilly nights. Instructions

1.Bring dried mushrooms and water to boil in a large pot.
2.Reduce heat and let simmer for 30 minutes.
3.Remove mushrooms with a slotted spoon and chop into small pieces.
4.Return mushrooms to pot along with chicken broth and barley.
5.Bring to a boil, reduce heat, and let simmer for 45 minutes.
6.Add diced potatoes, carrots, and onions, as well as salt and pepper.
7.Let soup simmer for an additional 30 minutes, or until vegetables are tender.
8.Serve hot with a dollop of sour cream and chopped parsley on top.
