2 tablespoons sour cream , at room temperature
12 cups salt water
Ruskie Pierogi (Pierogi With Cheese & Potato Filling) is a classic Polish comfort food that has been enjoyed for generations. These dumplings are made with a simple dough and stuffed with a filling of mashed potatoes, cottage cheese, and sauteed onions. Instructions

1.In a large bowl, mix together mashed potatoes, cottage cheese, sauteed onion, beaten egg yolk, melted butter, sugar, salt, and pepper until well combined. Set aside.
2.In a separate bowl, mix together flour and salt. Cut in the butter until the mixture is crumbly. Add in the egg, egg yolk, milk, and sour cream, stirring until just combined. Knead the mixture on a floured surface until it forms a smooth dough.
3.Roll out the dough until it is 1/8 inch thick. Cut out circles with a 3 inch cookie cutter.
4.Place a spoonful of the potato and cheese filling onto each circle. Fold the dough over the filling, pinching the edges together to seal.
5.Bring the salt water to a boil in a large pot. Add the pierogi in batches and cook until they float to the surface, about 3-5 minutes. Drain and serve hot with sour cream and sauteed onions.
