25 ounces white wine
4 quarts stock
2 1/2 ounces long grain rice
3/4 ounce chopped basil
1 split vanilla bean
25 ounces 35 % cream
tt salt and pepper
tt lemon juice
5 ounces butter

Instructions

1.Preheat your oven to 400°F.
2.Roast the lobster shells in the oven with olive oil until golden brown and crispy.
3.In a pot, sauté the mirepoix in butter until the vegetables are soft.
4.Add the roasted lobster shells and tomato paste, stirring until evenly combined.
5.Flame the brandy and add to the pot with vermouth and white wine.
6.Allow the mixture to simmer and reduce for 30 minutes.
7.Add the stock and bring the bisque to a boil.
8.Add the long grain rice and vanilla bean, and allow to cook on low heat for 20 minutes.
9.Remove from heat and blend the bisque until smooth.
10.Whisk in the cream and chopped basil, seasoning with salt, pepper, and lemon juice to taste.
