2 tablespoons rum or 2 tablespoons cognac
100 ml raspberries , frozen

Runeberg's Cakes are a traditional Finnish pastry that originated from the small Finnish town of Porvoo. This pastry was named after Johan Ludvig Runeberg, who was a famous Finnish poet and author from Porvoo. The cakes have a distinct flavor and are usually eaten on Runeberg's birthday, which is on February 5th every year. Typically, the recipe contains almond flour, breadcrumbs, and raspberry jam or liqueur. Today's recipe is a slight variation that adds a bit of whipped cream, vanilla sugar, and brown sugar. These cakes are perfect for your sweet tooth!

Instructions

1.Preheat oven to 220 degrees Celsius and line muffin tins with cupcake holders.
2.In a bowl, whisk together the egg, sugar, and brown sugar.
3.Melt the butter and add it to the bowl with the whipped cream.
4.In a separate bowl, mix together the flour, baking powder, and ground almonds.
5.Add the dry ingredients into the wet ingredients. Mix well until the batter is smooth.
6.Mix in the vanilla sugar and almond essence, stir and set aside.
7.In a pot, mix together the sugar, water, and rum or cognac. Bring it to a boil over medium heat and simmer for 5 minutes.
8.Add the raspberries and simmer until the sauce thickens.
9.Divide the batter evenly among the prepared muffin cups.
10.Press a small well into the center of each cupcake.
11.Spoon raspberry filling into each well.
12.Bake for 15 to 20 minutes, or until a skewer inserted into the center of the cakes comes out clean.
