Ingredients

2 lbs fruit ( strawberries , plums , cherries , peaches , pears , raspberries , currants , blueberries , gooseberries , ... )
1 lb sugar
3 cups rum
Rumtopf is a traditional German preserve that originated in the 18th century when people started looking for ways to preserve the fruit of their summer harvest for the long winter months. The name Rumtopf, which translates to “Rum Pot” in English, is quite literal and indicative of the process of fermentation and preservation of fresh fruit in rum and sugar. Instructions

1.Clean and chop the fruit into bite-sized pieces.
2.Layer the fruit and sugar in a large jar or crockpot, starting with the fruit and ending with sugar. Tightly pack down each layer to let them sit for a day before adding more.
3.Pour in the rum, making sure that all the fruit is covered.
4.Cover the jar with an airtight lid or plastic wrap and store it in a cool, dark place away from direct sunlight for at least 4 weeks, or up to 3-4 months. Make sure to give the jar a gentle shake every now and then to let the sugar dissolve and mix well with the rum.
