3 lbs rump beef
1 slice lard , if desired
1 1/2 cups best red wine

1 medium carrot , peeled , chopped fine
1 large stalk celery , well-trimmed , chopped rather fine
1/4 lemon , zest of

1 dried bay leaf ( optional )
beef broth , unsalted best
water , filtered
1/2 - 1 teaspoon cornstarch

Instructions

8.Remove the beef from the Dutch oven and let it rest for 10 minutes. Meanwhile, strain the cooking liquid and heat to a simmer. Whisk cornstarch and water to make a slurry, then slowly whisk into the cooking liquid to thicken it.
9.Slice the beef against the grain and serve with the cooking liquid on the side.
