Ingredients

1 bunch large kale , thinly sliced-about 8 cups
2 1/2 lbs russet potatoes , peeled , coarsely chopped
1/2 cup unsalted butter
1/2 cup sour cream
2 medium onions , chopped fine
1/2 cup chopped leek
2 small cloves garlic cloves
3 cups grated extra-sharp cheddar cheese
salt and pepper

Instructions

1.Preheat the oven to 375°F.
2.In a large pot, boil the potatoes until tender, then drain and mash with butter, sour cream, salt and pepper to taste.
3.Sauté onions and garlic in a large skillet until lightly browned.
4.Add chopped leek and sauté until softened.
5.Add kale and cook until wilted, then remove from heat.
6.Spread half of the mashed potato mixture in the bottom of a casserole dish.
7.Top with the kale mixture, then sprinkle with 1 1/2 cups of the grated cheese.
8.Top with the remaining mashed potatoes and sprinkle the remaining cheese on top.
9.Bake for 30-40 minutes, until the cheese is melted and bubbly and the potatoes are golden brown.
