Ingredients

1 1/2 lbs potatoes , peeled & cut into small even size pieces
6 -8 large savoy cabbage leaves , washed , trimmed & cut into 1/4-inch strips
4 tablespoons fresh chives , chopped
2 ounces butter
2 -4 tablespoons milk
salt
pepper
4 ounces scottish cheddar cheese or 4 ounces local cheddar cheese , grated
Rumbledethumps is a traditional Scottish dish, which has been enjoyed for centuries. It is a comforting and hearty gratin, which features mashed potatoes, sautéed savoy cabbage, and grated cheese. This dish provides an excellent source of complex carbohydrates and vitamins, which makes it an ideal side dish for a cold winter evening. It is also an excellent way to use up any leftover vegetables you might have in the fridge. The dish gets its name from the sound it makes when it is being prepared - the potatoes and cabbage make a rumbling noise whilst being mashed together. It is a simple yet delicious recipe, which is easy to prepare and can be enjoyed by the whole family.

Instructions

1.Preheat the oven to 375°F (190°C).
2.Boil the potatoes in salted water until soft , about 20-25 mins.
3.Meanwhile, steam the cabbage until soft but not overdone, for 8 minutes approximately.
4.Once the potatoes are ready, drain and mash them with the butter and milk.
5.Next, add the steamed cabbage, grated cheese, and chopped chives, and mix all the ingredients well together.
6.Season with salt and black pepper.
7.Place the mixture into a baking dish, and bake in the oven for about 25-30 minutes, until golden on top.
