Ingredients

3/4 cup pineapple juice

1 tablespoon cider vinegar

1 1/2 teaspoons lime rind , grated
1 1/2 lbs boneless skinless chicken breasts ( cut into 30 cubes )
2 mangoes , peeled and cut in to 1 inch cubes
18 cubes fresh pineapple
1 1/2 tablespoons vegetable oil
1 teaspoon salt

Instructions

1.In a small pot, combine the pineapple juice, sugar, dark rum, jalapeno peppers, and cider vinegar. Cook over high heat, stirring frequently, until the mixture comes to a boil.
2.In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water until smooth. Add the cornstarch mixture to the pot and whisk until well combined. Simmer for 2-3 minutes until the sauce has thickened.
3.Remove the pot from the heat and stir in the cilantro and lime rind.
4.In a large bowl, toss the chicken, mango, and pineapple with the vegetable oil and salt.
5.Thread the chicken, mango, and pineapple onto skewers.
6.Heat a grill or grill pan over medium-high heat. Spray with cooking spray.
7.Place the skewers on the grill (or grill pan) and brush with the rum glaze.
8.Cook for 10-12 minutes, turning occasionally and basting with the rum glaze, until the chicken is cooked through.
