Instructions

1.Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

3.In a bowl whisk 3 egg yolks and 2 eggs. Add 1/2 cup sugar, evaporated milk, orange rind and 2 tablespoons rum, mix well. Set aside.
4.In another bowl, mix together flour, 1/4 cup sugar, baking powder, and salt.
5.Mix the egg yolks, oil, rum, and orange juice into the dry ingredients to form a smooth batter.
6.In a separate bowl, beat the egg whites and cream of tartar together until soft peaks form. Gradually add in 1/4 cup sugar and continue beating until stiff peaks form.
7.Fold the egg whites into the batter until combined. Pour the batter over the caramel layer in the cake pan.
8.Cover the cake pan with aluminum foil and place into a larger pan filled with water.
9.Bake the cake for about 50-55 minutes or until an inserted toothpick comes out clean.
10.Remove the aluminum foil and let the cake cool in the pan. Once cooled, run a knife around the edge of the pan to loosen the cake and invert onto a serving plate. Serve with whipped cream.
