1 1/2 cups long grain rice
4 tablespoons butter
1 pinch saffron thread
4 cups water
1/2 teaspoon salt , to taste
1/4 cup pine nuts
1/4 cup hazelnuts ( filberts )
1/4 cup unsulphured dried apricot , cut into pieces
1/4 cup unsulphured raisins
Roz Bi Saffran, also known as Persian Saffron Rice, is a popular and traditional Persian dish. Instructions

1.Rinse the rice thoroughly in cold water and then drain.
2.In a pot, melt the butter over low heat.
3.Add the rice and sauté for 10-15 minutes until the rice is slightly toasted.
4.Meanwhile, soak the saffron in 2 tablespoons of hot water.
5.Add the water to the pot of rice, followed by the saffron water and salt. Bring to a boil, then reduce heat to low and cover.
6.Cook for 10-15 minutes, or until the water has been fully absorbed.
7.Remove the pot from the heat and allow it to sit, covered, for 5-10 minutes.
8.While the rice is steaming, toast the pine nuts and hazelnuts over low heat in a dry pan until they turn golden brown.
9.Once the rice is ready, fluff it up with a fork and transfer to a serving dish.
10.Garnish with the toasted nuts, dried apricot, and raisins and serve hot.
