Instructions

3.Shape the mixture into meatballs (about 1 1/2 - 2 inches each).
4.Heat some butter and oil in a frying pan over medium heat. Add the meatballs to the pan and cook, turning occasionally, until they are browned on all sides and cooked through.
5.As the meatballs cook, prepare the carrots: peel and cut the carrots lengthwise into quarters. Place them in a pot with enough water to cover them. Add salt and bring the water to a boil. Reduce the heat to medium and let the carrots cook for about 5-7 minutes or until tender.
6.While the carrots cook, prepare the parsley sauce: melt the butter in a saucepan over medium heat. Add the flour and whisk constantly for about a minute. Gradually add the milk while whisking constantly to avoid lumps. Keep whisking until the sauce thickens.
7.Remove the pan from the heat and stir in the chopped parsley. Season with salt and pepper to taste.
