Ingredients

8 garlic cloves , peeled
1 piece gingerroot , 2 . 5 cm cube ( peeled & coarsely chopped )
50 g blanched almonds , slivered
6 tablespoons water
7 tablespoons vegetable oil
1 kg boneless lamb shoulder ( In 2.5 cm cubes )
10 cardamom pods , 10 pieces
6 cloves
1 cinnamon stick , 3 cm long piece
200 g brown onions , finely chopped
1 teaspoon ground coriander
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
1 1/4 teaspoons salt
300 ml single cream
1/2 teaspoon garam masala
Royal Persian Lamb is a classic dish from the Middle East region that has been enjoyed for centuries. Instructions

1.In a blender, blend garlic, ginger, almonds and water until smooth.
2.In a large pot, heat 5 tablespoons of oil over medium heat, add the lamb and sauté until browned on all sides. Remove from skillet and set aside.
3.In the same pot, add the remaining 2 tablespoons of oil and sauté the cardamom, cloves, cinnamon, and onions until onions are caramelized.
4.Add coriander, cumin, cayenne pepper, and salt, and stir well to combine.
5.Add the garlic mixture to the pot and cook for 2-3 minutes.
6.Add the browned lamb to the pot, stir to combine and then cover and simmer over low heat for 1 hour or until lamb is tender.
7.Add cream and garam masala to pot and stir well.
8.Simmer for an additional 10-15 minutes until the sauce has thickened.
