Trifle is a classic British dessert that's been enjoyed for centuries. This version, the Royal Canadian Trifle, adds sherry and fruit cocktail to the traditional recipe for added flavor and texture. It's a dessert that's perfect for special occasions or as a show-stopping center piece for a dinner party. The layers of sponge cake, fruit jelly, custard, and whipped cream combine to create a deliciously sweet and creamy dessert.

Instructions

1.Cut the thawed pound cake into small chunks and place in a trifle bowl. Pour the cream sherry over the cake chunks.
2.In a mixing bowl, dissolve the strawberry gelatin in boiling water. Add in the ice cubes and stir well. Once the ice has melted, add drained fruit cocktail and lemon juice. Mix well, then pour this mixture over the cake chunks in the trifle bowl.
3.In a saucepan, whisk the custard mix, sugar, and milk until smooth. Cook over medium heat, whisking constantly, until the custard has thickened.
4.Pour the custard over the fruit layer, pressing lightly on the custard to even it out. Cover and refrigerate for several hours or overnight.
5.Before serving, whip the heavy cream until stiff peaks form and spread it over the custard. Garnish with fresh fruit and a few mint leaves.
