1/2 teaspoon dried thyme
Seafood and Okra :
1 pound frozen chopped okra
1 pound catfish , cut into 2-inch pieces
1 1/2 pounds peeled and deveined shrimp
Last Addition :
1 tablespoon gumbo file powder , or to taste
1/2 teaspoon salt , or to taste

Instructions

1.Start by making a roux. In a large, heavy-bottomed pot, whisk together the flour and oil until smooth. Cook over medium heat, stirring constantly, until the roux is dark brown in color.
2.Add the butter to the pot and stir until melted. Add the celery, onions, and bell pepper and cook until softened.
3.Add the water, tomato sauce, Worcestershire sauce, garlic, salt, and thyme to the pot and bring to a boil. Reduce heat and simmer for 30 minutes.
4.Add the okra and catfish to the pot and simmer for an additional 30 minutes.
5.Add the shrimp and simmer for an additional 10 minutes.
6.Stir in the gumbo file powder and salt to taste.
