6 -8 dried mushrooms
1/2 cup wood ear mushrooms
1/4 lb lean pork
2 tablespoons cornstarch , divided
3 teaspoons soy sauce , divided
3 teaspoons salt , divided
2 cups cabbage
1 inch fresh ginger , minced
1 carrot
1/2 lb bean sprouts
2 green onions
10 -15 medium shrimp
3 tablespoons vegetable oil , divided
1 tablespoon shaoxing wine
1 can chicken broth
Rou Si Chao Mifen (Pork Fried Rice) is a classic Chinese dish that has been enjoyed for generations. It is a staple in many Chinese households, especially during celebrations and special occasions. Instructions

1.Soak the thin rice sticks and dried mushrooms in hot water for 20 minutes, then drain excess water.
2.Cut the soaked mushrooms, wood ear mushrooms and pork into small pieces.
3.Marinate the pork in 1 teaspoon of cornstarch and 1 teaspoon of soy sauce for 5 minutes.
4.In a bowl, mix cabbage, carrots, and bean sprouts with 1 teaspoon of salt.
5.Heat 1 tablespoon of vegetable oil in a wok and stir-fry pork and shrimp until cooked. Remove from wok and set aside.
6.Heat the remaining 2 tablespoons of vegetable oil in the same wok, and stir-fry ginger, mushrooms, and the vegetable mixture for 2-3 minutes.
7.Add the rice sticks, 2 teaspoons of soy sauce, and 2 teaspoons of salt. Stir-fry for 2 minutes.
8.Add the cooked pork and shrimp, and sprinkle with 1 teaspoon of cornstarch.
9.Add the shaoxing wine, chicken broth, and green onions. Stir-fry for another 2-3 minutes.
