Ingredients

4 beetroots
3 carrots
3 potatoes
1 onion
2 tart apples
1 gherkin
1 teaspoon salt
1 pinch white pepper
200 ml heavy cream
1 teaspoon white vinegar
2 teaspoons beet juice
1/2 teaspoon sugar

Rosolli, or Finnish beetroot salad, is a traditional dish in Finland that is typically served during Christmas and other special occasions. Instructions

1.Boil the beetroot, carrots, and potatoes in a pot with enough water to cover the vegetables, for about 30 minutes, until they are soft.
2.Drain the water from the vegetables and let them cool.
3.Peel and dice the onion, apples, and gherkin.
4.Mix the diced vegetables together with the cooled beetroot, carrots, and potatoes and add salt and pepper.
5.Mix the heavy cream, white vinegar, beet juice, sugar, salt, and pepper in a separate bowl.
6.Pour the dressing over the vegetables and mix well. Chill for at least an hour in the fridge before serving.
