4 cups full-cream milk
1/2 teaspoon saffron , crushed
6 tablespoons sugar
2 green cardamoms , crushed
1/4 cup almonds , slivered
2 tablespoons pistachios , finely sliced
1 cup cornflour or 1 cup arrowroot
2 cups water
1 liter water , chilled

Instructions

1.In a heavy-bottomed pan, bring the milk to a boil and simmer over low heat for 30 minutes, stirring occasionally.
2.Add crushed saffron, crushed green cardamoms, and sugar, and mix well.
3.Cook for another 5 minutes until the sugar dissolves completely.
4.Add slivered almonds and finely sliced pistachios and mix well.
5.Dissolve cornflour or arrowroot in water, mix well, and add to the milk mixture.
6.Cook for another 10 minutes, stirring continuously, until the mixture becomes thick and creamy.
7.Remove from heat and let it cool completely.
8.Transfer the mixture to a blender and blend until smooth.
9.Pour the mixture into kulfi moulds and freeze overnight.
10.Once frozen, run the moulds under warm water for a few seconds to loosen the kulfi, and serve.
