Ingredients

1 cup basmati rice
2 cups vegetable broth
1 teaspoon margarine
1 cup cheddar cheese , grated
1 tablespoon fresh rosemary leaf ( heaping )
3 green onions , sliced
1 egg
1 egg , separated
1 package tofu , sheets
These Rosemary Rice Roll-Ups are a twist on traditional sushi rolls. The combination of rice, cheese, rosemary, and green onion provides a unique flavor and texture. Instructions

1.Rinse the rice in cold water and soak it for 30 minutes.
2.In a pot, bring the vegetable broth to a boil and add the margarine and rice. Reduce the heat and simmer, covered, until the rice is cooked and the broth has been absorbed (about 15 minutes).
3.Preheat the oven to 375°F.
4.In a large bowl, mix together the grated cheddar cheese, rosemary, green onion, egg, and egg white.
5.Spread one tofu sheet on a baking dish and cover with 1/4 of the rice mixture. Roll the tofu sheet tightly to create a cylinder. Repeat with the remaining tofu sheets and rice mixture.
6.Brush the egg yolk over the top of each roll.
7.Bake for 20 minutes or until the rolls are golden brown.
