Instructions

1.In a mixing bowl, whisk together honey, Dijon mustard, chopped fresh rosemary, ground black pepper, lemon zest, minced garlic, and salt. Set aside.
2.Preheat the oven to 375°F (190°C).
3.Place lamb in a large roasting pan, fat side up. Generously brush the honey mixture over the lamb.
4.Roast the lamb for about 1 hour and 30 minutes or until a meat thermometer inserted into the thickest part of the lamb registers 135°F (57°C) for medium rare, 145°F (63°C) for medium, or 160°F (71°C) for well-done.
5.Remove the lamb from the oven and let it rest for 15 to 20 minutes before carving.
