Ingredients

2 1/4 teaspoons active dry yeast
2 tablespoons sugar
2 cups bread flour , plus more for rolling ( bread flour needed for tenderness )
3/4 cup warm water
2 teaspoons chopped rosemary
1/2 teaspoon fine salt
1/4 teaspoon fresh ground pepper
1 1/2 cups red grapes , seedless
coarse sea salt
1/2 cup blue cheese , crumbled
1 tablespoon honey
1 tablespoon snipped chives or 1 tablespoon green onion top
Rosemary Flatbread with Blue Cheese, Grapes and Honey (Focaccia) is a savory dish that is perfect for sharing with friends and family. Instructions

1.In a mixing bowl, combine honey, yeast and sugar and mix it with 1/2 cup of warm water. Let the mixture rest for 5 minutes to permit the yeast to activate.
2.Add salt, chopped rosemary, black pepper, and 1 cup bread flour. Mix the ingredients and add additional flour and water till you have a smooth and consistent dough. Knead the dough, split it into two, and shape each part into flat disks.
3.Put the dough on a baking sheet and preheat the oven to 400 degrees F. Roll the dough into a flatbread on the baking sheet covering it with the grapes. An even layer should be maintained. Lightly sprinkle coarse salt over the grapes and add the crumbled blue cheese evenly.
4.Brush oil (olive oil or any other) all over the flatbreads, then drizzle honey over it followed by sprinkles of rosemary.
5.Bake for about 20-30 minutes until the flatbreads are cooked through. When cooked, sprinkle the snipped chives or green onion over the top and serve the flatbread warm.
