Ingredients

2/3 cup dried cannellini beans
3 tablespoons olive oil , plus extra for drizzling
5 tomatoes
2 sun-dried tomatoes packed in oil , drained and finely chopped
1 clove garlic , crushed
2 tablespoons fresh rosemary , chopped
salt
black pepper
1/4 cup basil leaves , to garnish
12 slices ciabatta
1 clove garlic , halved

Instructions

1.Soak the cannellini beans in water for at least 8 hours or overnight
2.Drain the beans and place them in a large saucepan with enough water to cover them by about an inch
3.Bring to a boil over high heat, then reduce the heat to low and simmer for about an hour, until the beans are tender. Drain and set aside
4.Preheat the oven to 400°F
5.Cut the tomatoes into small cubes and place them in a bowl
6.Add the sun-dried tomatoes, garlic, rosemary, and three tablespoons of olive oil to the bowl. Mix well. Season with salt and pepper to taste
7.Arrange the ciabatta slices on a baking sheet and drizzle them with olive oil
8.Toast the bread in the oven for about 10 minutes, or until golden brown
9.Rub the halved garlic clove over each slice of ciabatta
10.Top the toasted bread with the tomato mixture
11.Garnish with fresh basil leaves
