3 lbs peeled and trimmed onions ( yellow , white , red , or a mix )
1/2 cup olive oil
1 ounce fresh rosemary , about 6 big branches
3 bay leaves
3 -4 teaspoons kosher salt
fresh ground black pepper
1/2 cup balsamic vinegar
1/4 cup red wine vinegar
1/4 cup white wine
1/2 cup honey
1/4 cup sugar

Instructions

1.Preheat the oven to 425 degrees F (218 degrees C).
