Ingredients

160 g shelled pistachios ( I approximated all amount of nuts using a converter to cups )
220 g blanched slivered almonds ( I approximated all amount of nuts using a converter to cups )
300 g chopped walnuts ( I approximated all amount of nuts using a converter to cups )
2 teaspoons freshly ground cardamom ( hail )
2 teaspoons cinnamon ( darseen )
1/2 cup white sugar
24 sheets phyllo pastry
200 g sweet butter , melted ( sweet butter means unsalted )
pistachios , slivered , to decorate
dried rose petals , to decorate ( found in Iranian shops )
2 cups white sugar
1 tablespoon honey ( use good quality , for good flavour )
1 cup water
1 1/2 tablespoons iranian rose water ( I state Iranian as I find it superior , not strong or fake tasting , found in Iranian shops )
Rose Mixed Nut Baklava is a classic Middle Eastern dessert that's popular around the world. Made with layers of buttery phyllo pastry, chopped nuts, and a sweet, fragrant syrup flavored with rose water, it's a decadent and rich treat that's perfect for special occasions. While some people may find baklava too sweet, the combination of cinnamon, cardamom, and rose water creates a unique and delicious flavor that's hard to resist. Instructions

1.Toast the nuts in a dry skillet over medium heat until lightly golden and fragrant. Remove from heat.
2.In a large mixing bowl, combine the toasted nuts, cardamom, cinnamon, and 1/2 cup of sugar.
3.Preheat the oven to 350°F and grease a 9x13 inch baking dish.
4.Lay 12 sheets of phyllo pastry in the bottom of the dish, brushing each layer with melted sweet butter.
5.Spread half the nut mixture evenly over the pastry.
6.Cover with another 6 layers of buttered phyllo pastry and the other half of the nut mixture.
7.Top with the remaining 6 layers of buttered phyllo pastry.
8.Using a sharp knife, cut the pastry into diamond shapes.
9.Bake for 45 to 50 minutes, or until golden and crispy.
10.While the baklava is baking, make the syrup by combining 2 cups of sugar, honey, water, and rose water in a saucepan. Stir to dissolve the sugar and bring to a boil, then reduce heat and simmer for 10 minutes.
11.Once the baklava is finished baking, remove from the oven and pour the hot syrup over the top.
12.Allow the baklava to cool completely before serving, and garnish with slivered pistachios and dried rose petals.
