2 stalks lemongrass
1 lime ( grated )
1 tablespoon gingerroot ( grated )
4 teaspoons cornflour
2 cans coconut milk
salt and pepper
300 g basmati rice
1 pinch turmeric

Instructions

1.Heat a large frying pan over medium-high heat and add the oil.
2.Add the mushrooms and cook for 5 minutes, stirring occasionally.
3.Cut off the tops of the lemongrass and remove the tough outer layers. Finely chop the tender parts and add to the pan.
4.Add the lime zest, ginger, and cornflour and stir well to combine.
5.Slowly pour in the coconut milk, stirring constantly until the sauce is smooth.
6.Reduce the heat and simmer the stroganoff for 15-20 minutes, stirring occasionally, until the mushrooms are tender and the sauce has thickened.
7.Season with salt and pepper to taste and keep warm.
8.Meanwhile, prepare the basmati rice according to the package instructions, adding a pinch of turmeric for color.
