Ingredients

3 1/4 - 3 3/4 cups all-purpose flour
active dry yeast
2/3 cup milk
1/3 cup butter
1/3 cup granulated sugar
1/2 teaspoon salt
2 eggs
3 tablespoons butter , softened
1/4 cup granulated sugar
2 teaspoons ground cinnamon
3/4 cup diced mixed candied fruit , and peel
1/2 cup chopped toasted almond
1 cup sifted powdered sugar
1/4 teaspoon vanilla
1 -2 tablespoon orange juice
ground cinnamon ( optional )
finely shredded orange peel ( optional )
Roscon De Reyes is a traditional Spanish pastry that is usually enjoyed on the morning of January 6th, Three Kings Day, also known as Epiphany. This cake is usually shaped like a crown, to represent the crowns worn by the Three Wise Men who visited baby Jesus in the Bible story. The candied fruit and peel on top of the pastry represent the jewels in the crown. The pastry is often served with hot chocolate or coffee, and it is a fun and delicious way to celebrate the day. With this recipe, you can bring a bit of Spanish tradition to your home.

Instructions

1.Warm the milk in a small pot over low heat until it reaches 105 - 110°F, then pour into a mixing bowl.
2.Add the yeast and 1/2 cup flour to the bowl and mix to combine. Let sit for 15 minutes.
3.Add the butter, sugar, and salt to the mixing bowl. Mix well until combined.
4.Add the eggs one at a time, mixing well after each addition.
5.Add the remaining flour a little at a time, mixing until the dough forms a ball.
6.Knead on a floured surface for 10-12 minutes until smooth and elastic.
7.Place the dough in a greased bowl and cover it with a damp cloth. Let it rest in a warm place to double in size, about 1 hour.
8.Preheat the oven to 375°F. Line a baking sheet with parchment paper.
9.Turn the dough out onto a lightly floured surface. Punch it down and shape it into a ring. Place it on the baking sheet.
10.Combine the softened butter, sugar, cinnamon, candied fruit and peel, and chopped toasted almond. Spread the mixture over the ring of dough.
11.Bake in the preheated oven until golden brown, 20-30 minutes.
12.Remove from oven and let cool.
13.Combine powdered sugar, vanilla, and enough orange juice to make a glaze. Drizzle over the top of the cooled Roscon De Reyes. Sprinkle with ground cinnamon and shredded orange peel, if desired.
