Ingredients

1 large onion , chopped
2 tablespoons/ 30 ml olive oil
4 cups/ 1 l wild mushrooms , chopped ( a mix of king Erenghi , oyster and shiitake )
3/4 ounce/ 20 g dried mixed mushrooms , rehydrated
2 garlic cloves , minced
salt & freshly ground black pepper
1/2 cup/ 125 ml queso fresco
1 bunch fresh chives , chopped
1 bunch fresh parsley , chopped
2 poblano chiles , roasted , peeled and sliced
2 cups/ 500 ml masa harina
1 1/2 cups/ 375 ml veal stock ( or chicken stock or reserved liquid from dried mushrooms )
1/2 teaspoon/ 2 ml salt
1/2 cup/ 125 ml lard ( or duck fat , or butter , softened )
salsa
queso fresco , crumbled
cilantro , chopped
Tamales are a traditional Mexican dish that are typically made with corn masa dough, which is filled with a savoury filling, wrapped in a corn husk and steamed until cooked through. Rosalia Jr.'s Tamales are a twist on this classic dish. In this recipe, wild and dried mushrooms are combined with poblano chiles, queso fresco and fresh herbs to create a rich and flavourful filling. These tamales can be served as a main course or as an appetizer for a party. They are a great way to introduce your family and friends to a delicious and traditional Mexican dish that has been enjoyed for generations.

Instructions

1.In a large skillet, heat olive oil over medium-high heat. Add chopped onion and saute until translucent, about 5 minutes.
2.Add wild mushrooms, rehydrated dried mushrooms and minced garlic. Stir for a couple of minutes.
3.Season with salt and freshly ground black pepper. Remove from heat and add chopped queso fresco, fresh chives, fresh parsley and sliced poblano chiles.
4.In a large mixing bowl, combine masa harina, veal stock, salt and lard. Knead well until the dough is smooth and comes together.
5.Take a good chunk of the dough and form it into a ball. Flatten it and place it on an oiled corn husk.
6.Spread the mushroom mixture over the masa and roll up the tamale, making sure to fold the ends of the husk under.
7.Steam the tamales for 1 hour or until they are firm and cooked through. Serve with salsa, crumbled queso fresco and chopped cilantro.
