Ingredients

3 1/2 lbs beef flank steaks
beef stock
1 carrot , sliced
10 garlic cloves , sliced
2 tablespoons vegetable oil
2 onions , thinly sliced
3 anaheim chilies or 3 poblano chiles , deseeded and sliced
warmed flour tortilla , to serve
3 ripe tomatoes , diced
8 radishes , diced
3 tablespoons fresh cilantro
4 scallions , chopped
1 -2 lime , cut in wedges

Instructions

1.In a large pot, add the beef flank steaks, carrots, garlic, and enough beef stock to cover the meat. Bring to a boil and then reduce heat to low, cover and simmer for 1 1/2-2 hours, or until meat is very tender.
2.Remove the meat from the pot and let cool for a few minutes then shred it with a fork.
3.In another large pot, heat the vegetable oil over medium-high heat. Add the onions and chilies and sauté until softened, stirring frequently.
4.Add the shredded meat to the pot with the onions and chilies. Stir to combine everything and cook until heated through.
5.Serve the Ropa Vieja hot with warmed flour tortillas, diced tomatoes, radishes, cilantro, scallions, and lime wedges.
