Ingredients

1 chicken ( or 4 chicken breasts )
2 large onions
2 cups rice
5 cups chicken broth
2 tablespoons cinnamon
salt and pepper

Instructions

1.Rinse rice in cold water and drain well.
2.In a large pot, heat oil over medium-high heat and cook chicken until browned on all sides, remove chicken and set aside.
3.In the same pot, cook onions until softened, about 5 minutes.
4.Add cinnamon, salt, and pepper to the onions, stirring to combine. Return chicken to pot.
5.Add chicken broth, bring to a boil, cover and reduce heat to low. Simmer for 30 minutes, until chicken is cooked.
6.Remove chicken from pot and set aside.
7.Add rinsed rice to chicken broth, cover and cook over low heat until all liquid is absorbed, about 25 minutes.
8.In a separate pan, toast pine nuts over low heat until they are lightly browned.
9.Serve rice on a platter topped with pine nuts and chicken pieces. Enjoy!
