1 teaspoon salt
2 racks lamb ribs
1 can or bottle root beer
salt and ground black pepper to taste
3 cloves garlic , peeled
1/4 cup finely chopped green onions
1/4 cup rice vinegar
1 tablespoon Asian chile pepper sauce ( such as sambal oelek )
2 teaspoons toasted sesame seeds

Instructions

1.Preheat oven to 325 degrees F (165 degrees C).
2.In a large bowl, whisk together the sesame oil, chile-garlic sauce, and salt until combined.
3.Add the lamb ribs to the bowl and toss them into the mixture until coated evenly.
4.Place the ribs onto a roasting rack on a baking dish. Pour the root beer around the rack and season with salt and pepper.
5.Place the garlic cloves on top of the ribs. Cover the dish with foil and bake for 1 1/2 hours.
6.In a small saucepan, combine the green onions, rice vinegar, chile pepper sauce, and sesame seeds. Place the saucepan over medium heat and bring it to a boil while stirring.
7.Simmer the sauce over low heat until thickened, stirring occasionally, for around 10 minutes.
8.Remove the ribs from the oven and brush them with the sauce. Increase the oven temperature to 375 degrees F (190 degrees C) and bake uncovered for an additional 10-15 minutes until the glaze is caramelized and the ribs are crispy. Serve hot.
