Ingredients

4 cups chicken stock
4 cups beef stock
salt & pepper
3 eggs , beaten
4 tablespoons semolina ( or regular flour )
4 tablespoons parmesan cheese ( freshy grated is best )
1 teaspoon lemon zest ( very fine )
1 pinch salt

Instructions

1.Pour chicken stock and beef stock into a pot and bring it to a boil. Season it with salt and pepper.
2.Whisk semolina, parmesan cheese, lemon zest, and a pinch of salt in a bowl. Add beaten eggs to it and whisk it further.
3.Lower the heat of the pot to a simmer. Now, gradually pour the egg mixture into the pot and use a spatula to stir. The soup will have egg ribbons.
