6 skinless , boneless chicken breast halves , pounded 1/3 inch thick
8 ounces thinly sliced ham
2 teaspoons vegetable oil
2 cups water
5 guajillo chile peppers , stemmed and seeded
1 pound tomatoes , seeded and chopped
2 teaspoons vegetable oil
1/2 cup orange juice
1/2 teaspoon dried oregano

Instructions

1.In a large skillet, cook onion and 1 clove garlic in 2 teaspoons of vegetable oil over medium heat until onion is translucent.
2.Add minced garlic, mushrooms, and cilantro. Cook until mushrooms are tender. Set aside.
3.Preheat oven to 375 F (190 C).
4.Place chicken breasts flat on work surface. Top each chicken with a slice of ham and mushroom mixture.
5.Roll up each chicken breast and secure with toothpicks.
6.In another skillet, heat 2 teaspoons of vegetable oil and sauté both sides of chicken until browned.
7.In a blender, puree water, guajillo chile peppers, tomatoes, vegetable oil, orange juice, oregano, and salt until smooth. Pour sauce over chicken.
8.Bake chicken in preheated oven for 35 minutes.
