Ingredients

3 egg whites
1 cup fine sugar
1 teaspoon vanilla essence
1 teaspoon vinegar
1 tablespoon cornflour ( cornstarch )
1 1/2 tablespoons fine sugar
1 1/2 tablespoons macadamia nuts
1 1/2 tablespoons skinned hazelnuts
1/2 teaspoon ground cinnamon
1 cup whipped cream
2 tablespoons coffee or 2 tablespoons pureed berries
2 tablespoons icing sugar
The Rolled Pavlova, a beloved dessert hailing from New Zealand & Australia, is named after the famous Russian ballerina Anna Pavlova. Instructions

1.Preheat your oven to 150°C (300°F).
2.Grease and line a 23cm x 32cm Swiss roll pan with baking paper.
3.Using an electric mixer, beat egg whites until soft peaks form. Add sugar, 1 tablespoon at a time, beating constantly until sugar dissolves and mixture is glossy.
4.Beat in vanilla and vinegar.
5.Sift cornflour and remaining sugar over egg white mixture. Add macadamia nuts, hazelnuts, and cinnamon. Fold in until just combined.
6.Spread mixture into pan. Smooth surface with a spatula.
7.Bake until just firm to touch, about 25 minutes.
8.Place Pavlova on baking paper-lined wire rack. Let cool for 5 minutes.
9.Place another sheet of baking paper over Pavlova. Invert onto this paper. Remove the pan and lining paper.
10.Spread whipped cream over Pavlova. If you want a coffee flavour, add coffee to whipped cream or add pureed berries of your choice. Roll up from the longest side. Place on a serving plate.
11.Dust with icing sugar and sprinkle with extra chopped nuts to serve. Refrigerate if not serving immediately.
