Ingredients

8 lasagna noodles ( boiled per instruction on the package and strained )
1 small eggplant
2 cups shredded cheese , divided ( I used jalapeno jack , you can use any other per your choice )
no . 1 onion ( sliced thin and long )
1 jar spicy marinara sauce ( or you can make your own sauce , I did n't have time in hand )
1 teaspoon crushed red pepper flakes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic salt
salt , for sprinkling on eggplant
1/2 teaspoon black pepper ( for sprinkling on eggplants )
1/2 teaspoon italian seasoning
2 tablespoons olive oil
Roll up Eggplant Lasagna is a twist on the traditional lasagna recipe. It combines tender roasted eggplant slices with melted cheese and flavorful marinara sauce to create a tasty homemade dinner. Instructions

1.Preheat oven to 375°F.
2.Slice eggplant into thin rounds and place on a baking sheet. Sprinkle with salt and black pepper. Drizzle with olive oil and roast in the oven for 10-15 minutes or until tender and slightly browned.
3.In a pan, sauté onions until golden brown. Add crushed red pepper flakes, dried basil, dried oregano, garlic salt, and Italian seasoning to the pan. Pour in marinara sauce and let it simmer for 10 minutes on low heat until fragrant.
4.Take a lasagna noodle and spread the marinara sauce mixture evenly over it. Place a few roasted eggplant slices on top and sprinkle shredded cheese. Carefully roll up the lasagna and place it seam side down in a baking dish. Repeat the process with the remaining noodles.
5.Pour the remaining marinara sauce over the rolls and sprinkle with the remaining cheese. Cover the baking dish with foil and bake for 20-25 minutes.
6.Once done, remove from oven and let it cool for a few minutes before serving.
