Ingredients

2 packages active dry yeast
1/2 cup molasses
1/2 cup water
2 tablespoons butter
1 1/2 cups milk , lukewarm
3 1/4 cups rye flour , unsifted
2 tablespoons sugar
2 1/2 cups bread flour , unsifted
1 teaspoon salt

Instructions

1.In a large bowl, dissolve yeast in water and let sit for 5 minutes.
2.Add the molasses and melted butter to the yeast mixture and stir to combine.
3.Add in the lukewarm milk, rye flour, sugar, bread flour, and salt. Mix until well combined.
4.Knead the dough on a floured surface for about 10 minutes, or until it becomes smooth and elastic.
5.Place the dough in a greased bowl, cover it with a towel, and let it rise for about 2 hours, or until doubled in size.
6.Punch down the dough and shape it into a round or oblong loaf. Place it in a greased bread pan and let it rise for another 30-45 minutes.
7.Preheat the oven to 375°F (190°C). Place the bread pan in the oven and bake for 50-60 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
8.Remove the bread from the oven, let it cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
